Pretzels that breathe life

“It is fascinating how different bakeries work. One of our
customers produces 20,000 pretzels each day. Considering
this high output, one would expect to see a large conti-
nuous lye applicator in the bakery. Far from it! The bakery
operates five smaller units from WP Riehle: two BELMA –
this was the first type of lye applicator made by WP Riehle
featuring an internal belt conveyer, one JET 100 and two
ALLROUND units. The baker attaches great importance in
making “pretzels that breathe life”. The pretzels are made
from soft dough, twisted by hand to various sizes and
then immediately baked or flash frozen. Due to the large
variety of pretzels, the various units with their different
features are just perfect. In particular, the ALLROUND unit
allows the easy exchange of lye tanks that hold alkaline
solutions of different concentrations. At first sight, this
arrangement seems astonishing, but at second sight it
